Eggless marble cake

Now that the  baking bug has bit me ,I have to find excuses and tell my hubby dear S that I’m baking for the kids sake,lol,health reason n so .Yesterday was Sunday,poor fellow had to go  in search of  vanilla essence for my kids sake  and finally got 2 bottles.So sweet of him.Now the choice was whether to bake Victorian malai cake or Marble cake and I decided upon Marble cake.Had to give a short break to my choco baby.Marble cake is the cousin of Zebra cake,almost similar.Do you’ll remember I had posted it on my first month bday of my blog baby ?  Marble cake is a combination of vanilla and choc flavor and has the swirly effect like a marble,thus  the name.As a kid,had seen  the recipe several times,  in my ammas and aunts handwritten recipe book and had wondered what must be that,and  it was believed that baking was done only in christian houses those days,may be the recipes were collected  for my future use, that is  now ,lol..I have so many handwritten recipe books,should check in leisure and try  out new recipes…..Coming back to the cake,it was successful  and I should pat my back,well done gal!It was thoroughly  enjoyed by my kids and family.We could not resist until it got cooled completely,my daughter threatened me to finish my photographs fast or else would attack it,so had to finish my photo session fast ,uffffffffffff.



Recipe adapted from:Nita mehta s book

Ingredients:
All purpose flour(maida)-2 cups(250 gm)
Baking powder-1 ½ tsp
Baking soda-1 1/2 tsp
Milkmaid(condensed milk)-400 gm tin
Sugar -2 tbsp
Vanilla essence-2 tsp
Unsalted Butter-100 gm(1/2 cup)
Salt –a pinch
Cocoa powder-2 tsp
Milk -1 cup(250 ml)


Method:
  1. Grease a 9” round tin.(I used a square tin)
  2. Preheat the oven to 150 deg C /300 deg F.
  3. Sieve maida,baking powder and baking soda and keep it aside.
  4. Mix milkmaid,vanilla essence,butter,sugar  and beat until light and fluffy.
  5. Add milk and beat further.
  6. Add the maida mixture little by little and beat it until you finish it to a smooth batter.
  7. Divide the portion equally into 2 parts.
  8. To one part mix cocoa powder and mix well.
  9. Put half of the plain mixture in half side of the cake tin,in the other empty half,put half of the chocolate mixture,swirl a spoon lightly in the mixture to get a marble effect.
  10. Now,put the leftover plain mixture on the chocolate mix and the chocolate one on the plain mixture,swirl the spoon again.
  11. Smoothen the top and bake at 150 deg C/300 deg F for 35 minutes(the recipe calls for 1 hour).
  12. Insert a clean knife in the center of the cake,if it comes out clean,switch off the oven,remove from the oven  and cool it completely and slice it.



My notes:
Whenever you’ll use unsalted butter add a pinch of salt to the cake.
If you are using salted butter ,omit salt.
Baking time and temperature varies from every oven, don’t forget to check while baking,without disturbing the cake much.
Avoid opening the oven door several times as it disturbs the baking job.
