Ghee rice

Ghee rice is a  very rich rice preparation garnished with dry fruits,spices  and infused with the aroma of clarified butter,that is ghee.It is best served with the  egg curry,chicken curry or any vegetarian gravy.This dish  is  my amma’ s recipe and is the best ghee rice in the world and also one of my favorite rice preparation.As far as possible,any rice preparation like pulav’s ,biryani  I use only home made ghee which is very  aromatic.I cant even imagine the preparation with the oil.Anyways its individual choice.So here goes the recipe.



Ingredients:
India gate basmathi rice-2 cups
Water -3 ½ cups
Onions-3 slit lengthwise
Cloves-6
Cardamom-6-7
Cinnamon-2 “
Cashews-handful

Raisins-10
Yellow food color- ¼ tsp(only for biryani)
Ghee-3 tbsp


Method:
  1. Wash the rice and keep it aside.
  2. Take ghee in a pan and fry onions till light red in color.
  3. Then add  the washed rice and  the whole spices ,cashews,raisins,and fry for a minute.
  4. Then add salt ,(food color) and water.
  5. Take exactly one whistle and off the flame.
  6. Open the lid once the pressure releases.
  7. Serve it hot with egg curry.     
Tips:
       Same ghee rice recipe is used in most of my biryani dishes,only difference is I use food color for few.
