Ragda Patties

This is the second recipe of Ragda Patties I’m sharing in the space. Last time I had shared the recipe from Tarla Dalal’s book which I had tried then. This is the recipe which we follow  past few years. Patties recipe was shared to me by Santoshi Nayak. Santoshi is too good with chat preparations. If you land at ‘Sai Sadan’, (yes that is my Amma’s house name) you may be lucky to either taste some chat or sandwich or some yums she prepares.

Ingredients for the Patties:

Potatoes- 6, boiled and smashed

Ghee – 1tsp

Green chilly -2

Coriander leaves- handful

Chilly powder – 1/2 tsp or to taste

Turmeric powder – 1/4 tsp

Oil – as much as needed to drizzle patties

Ingredients for the Ragda:

White peas/Batani/Vatana – 2 cups, cooked

Cumin seeds – 1tsp

Fennel seeds – few

Onion – 2, chopped

Ginger garlic paste – 1tsp

Asafoetida – a pinch

Tamarind pulp – 2 tsp

Chilly powder – 1.2 tsp

Turmeric powder – 1/4 tsp

Garam masala powder -1 tsp

Oil – 2 tbsp

 

Method for patties:

  1. Heat ghee and saute green chilly, coriander leaves until it fades a bit.
  2. Make a paste out of it.
  3. Add it to the smashed potato mixture.
  4. Add salt to taste and make a dough.
  5. Make round balls and flatten a bit.
  6. Tawa fry it drizzling oil.
  7. Cook till done and it gets roasted.

Method for the Ragda:

  1. Heat oil in a pan, splutter cumin seeds and fennel seeds.
  2. Add onions and saute for few minutes.
  3. Add ginger garlic paste and saute until raw smell disappears.
  4. Add all the powders one at a time and lower the flame.
  5. Add tamrind pulp, jaggery and cooked peas.
  6. Add salt to taste and take a boil.

For sweet chutney:

Tamarind pulp – 1/4 cup

Jaggery – 1/2 cup approx

Ginger powder – 1/2 tsp

Date syrup- 1/4 cup or more

Chilly powder – 1/4 tsp

Saunf/ fennel seeds – 2 pinches

Method:

  1. Cook everything together until one boil comes.
  2. Thicken as much as want.
  3. You may make this sauce/sweet chutney and refrigerate for months.

Ingredients for green chutney:

Mint leaves – handful

Coriander leaves – handful

Green chilly – 1

Garlic -2

Coriander powder – 1/4 tsp

Cumin powder – 1/4 tsp

Lime – 1/2

Salt – to taste

Method:

  1. Grind all the ingredients to a fine paste.

Ingredients to garnish :

Sweet chutney- as much as needed

Green chutney- as much as need

Chopped onions- as much as needed

Sev – thin, as much as needed

Coriander leaves – to garnish, as much as needed

Peanuts – few

Pomegranate seeds – few
