Ranch Salad

Hello dear readers! Today im going to share an interesting salad recipe. This recipe is a keeper. Do give it a try.


Ingredients:

  • 1 cup cooked chickpeas
  • 200g blanched broccoli
  • 1 sliced onion
  • 2 tbsp dried cranberries
  • Few asparagus spears (optional)
    Sundries tomatoes tossed in olive oil
  • Olive oil
  • Cajun seasoning
  • 3 tbsp roasted cashews
  • Salt to taste
    Dressing:
  • Greek yogurt 200g approx
  • Minced garlic 1tsp
  • Lime juice
  • Drizzle of honey
  • Salt to taste
    Method:
  1. Air-fry cooked chickpeas with a little olive oil and Cajun seasoning for 5 minutes.
  2. Air-fry blanched broccoli until slightly charred, seasoning with Cajun seasoning.
  3. If using asparagus, air-fry for a minute.
  4. Mix all dressing ingredients together.
  5. Layer it in a plate.
  6. Arrange the veggies. Drizzle with Tahini. Add grated cheese of your choice.( parmesan or cheddar)
    Tips:
  • You can customize the salad by adding or substituting ingredients.
  • Adjust the amount of Cajun seasoning according to your taste preferences.
