Kirlu Thallale /Bambooshoots fritters


Bamboo shoots are in season, and we’re making the most of it! 😊 I’m loving the chopping part off late . It’s been ages since we’ve had fried bamboo shoots – my sister and I just can’t get enough of them! Aayi used to make them often when we were kids, and I’m excited to recreate her version with a few tweaks of my own. 🍴. Made with fresh Kirlu not the brined one.

Ingredients:

  • 3 cups bamboo shoots (or as needed)
  • 3 tsp chilli powder (approx)
  • 2 pinches asafoetida (hing)
  • 2 tbsp gram flour (besan)
  • 3 tbsp rice flour
  • 2 tbsp cornflour
  • Salt to taste
    Method:
  1. Soak bamboo shoots for 3 days, changing water daily.
  2. Smash shoots in a mortar and pestle.
  3. Mix in all ingredients (chilli powder, asafoetida, besan, rice flour, cornflour, salt).
  4. Heat coconut oil and deep-fry until crisp.
  5. Serve hot.
