Almond Mysore pak

I made this on 1st day of Diwali and we celebrate Dhanvantari Jayanti or Dhanteras. Wishing everyone good health, peace, and prosperity on this auspicious day. Sharing my Diwali sweet – Almond Mysore Pak, made with MasterChef Mom’s recipe, and it turned out perfect!

Ingredients

– 3/4 cup almonds (or 1 cup almond flour)

– 1 cup besan/gram flour

– 2 cups sugar

– 1 cup milk

– 1 cup ghee + 1/4 cup hot ghee

– Pinch of cardamom (optional)

Method:1. Grind almonds to a powder.

2. Sift and dry roast besan on low flame till raw smell disappears, without changing color.

3. Add almond flour, toast for a few seconds, then add ghee.

4. Once ghee melts and mixture is warm, switch off.

5. In another pan, add sugar, milk, and cook to one-string consistency.

6. Add cardamom (if using).

7. Add badam-besan-ghee mix little at a time.Mix it well.

8. Add 1/4 cup ghee little at a time.

9. Cook until it starts to bubble in the sides. Switch off the flame.

10. Transfer to a greased plate.

11. Let it sit for 5 to 7 minutes, then make mild cuts with a greased knife, and cut into burfis once set.

12. This will take about an hour.

13. Handle the mixture with caution as it will be super hot.

Tip:Get all ingredients ready before starting, as the process requires quick hands.
