Cajun Potatoes

Hello dear readers! Today I will share an interesting recipe called Cajun Potatoes. Technically we first tasted it in ‘Barbeque Nation’. If at all we tasted it earlier its deleted from the memory… This dish is our family favourite. For Cajun spice mix I have shared the recipe from the blog “Indian Veggie Delight” . I used readymade spice mix. This recipe  does not have any precise measurement. I made it with eye ball measurement like most of my recipes. So adjust the spices as per your taste.

Ingredients:

Baby potatoes – 20

Cajun Spice mix –  2 tbsp approx*

Tomato sauce- 2 tbsp approx

Sugar – 1tsp or to taste

Eggless Mayonnaise sauce – 1/2 cup

Cream cheese – 2 tbsp

Chopped onion – 1

Spring onion –  to garnish,chopped

Oil – 2 tbsp

Salt – to taste

Method:

  1. Wash and par boil the baby potatoes in salt water.
  2. Once just cooked, cool it and retain the skin.
  3. Using the back of the spoon press each potato until the skin just splits.
  4. You may also press it with the palm.(I followed this method ).
  5. Keep it aside.
  6. For the sauce, mix Mayo, Cajun spice mix as much as needed, tomato sauce,sugar and cream cheese.
  7. Adjust the taste as per your taste.
  8. Heat oil and shallow fry the potatoes until crisp.
  9. Take a serving plate and arrange the crispy potatoes.
  10. Pour the sauce over it.
  11. Garnish it with onions and spring onion greens.
  12. Serve it immediately.

My notes:

  • You may use ready made cajun mix or you may prepare it at home.
  • Fry the potatoes only when you  are ready to serve.

Cajun spice mix :

Garlic powder – 1tsp

Dried Oregano – 1/2 tsp

Dried thyme – 1/2 tsp

Pepper powder or Cayenne pepper powder – 1/2 tsp

Red chilly powder – 1/2 tsp

Red chilly flakes – 1/2 tsp

Onion powder – 1/2 tsp

Mix everything together.
