Vegetable Manchow Soup

Lost your Appetite?Then this is the best soup to get back your taste buds .This is a popular street food in China.Plenty of finely chopped veggies are simmered in a broth which contains generous helpings of ginger and garlic.The aromas of ginger and garlic truly awaken your senses.

Serves 6
Ingredients:
Oil-2tbsp
Onion-1 (finely chopped)
Ginger-1tsp(finely chopped)
Garlic-4(finely chopped)
Mushroom-6(chopped)
Cabbage-3tbsp
Capsicum-3tbsp
Carrot-1 (finely chopped)
Salt and pepper-to taste
Soya sauce-3-4 drops
Chilly sauce-2tsp
Vinegar-1tsp
Vegetable seasoning cubes (Maggie)-2
Water-6cups
Cornflour-6tbsp dissolved in water
Spring onions for garnish
Deep fried noodles :
Noodles-200gm
Oil-to deep fry
Method:
1)Boil veg haka noodles.
2)Don’t overcook.
3)Drain immediately in a colander and put cold water over the noodles.
4)Add 2 tsp cornflour and mix it and deep fry.
5)You can store this for chopsuey.
Method:
1)Heat 3tbsp oil,reduce heat,add garlic,onion and ginger and saute for a minute.
2)Add mushrooms and stir for a minute on medium flame
3)Add  chopped cabbage,carrot and capsicum.
4)Add pepper,soya sauce ,chilly sauce and vinegar ,stir and mix well.
5)Add 6cups of water and bring to a boil,crush the  seasoning packet and add it to the boiling water,simmer for 4-5 minutes ,check salt.
6)Add dissolved cornflour,bring to a boil,stirring constantly,simmer for 2 minutes.
7)Garnish with chopped spring onion.
8)Serve in soup bowls garnished with fried noodles.
