Laaye Appo/ Paddu/Paniyaram

Recently, I stumbled upon a new recipe that caught my attention. With some surplus puffed paddy (laayi) on hand, I decided to give it a try. After making a few tweaks, it turned out amazingly well – definitely a keeper! Give it a shot!

Ingredients:- Dosa rice: 2 cups

– Laayi (Puffed paddy): 2 cups

– Grated coconut: 1.5 cups (tender ones preferred)

– Coconut water: 1 cup

– Salt: to taste

For garnish:

– Coconut pieces

_Curry leaves

– Hing

Method:1. Soak dosa rice for 3-4 hours.

2. Soak laayi in coconut water 10 minutes before grinding.

3. Grind soaked rice, puffed rice, and grated coconut into a fine, thick batter.

4. Ferment overnight.

5. Next morning, add salt to taste and garnish with the mentioned ingredients.

6. Make Appo and serve hot with chutney.
