Taushe/Thoushe Muddo
Thoushe Muddo – a favorite dish of mine, though we don’t make it often. Traditionally, it’s prepared after the Vaina Puja ritual using leftover cucumbers, rice, and banana leaves. You can prepare using idli moulds, and it’s best made with turmeric or banana leaves for that extra flavor boost! I opted for the instant version, using Idli rawa or Bombay rawa – Bombay rawa works better as it’s finer.You can make a sweeter version by using only jaggery, but I made a mix – a balance of spicy and sweet!

*Ingredients:*
– 2.5 cups Idli rawa or Bombay suji
– 4-5 small cucumbers
– 3/4 cup jaggery (adjust to taste)
– 1 tbsp ginger
– 3-4 green chilies
– 2 cups grated coconut
– Salt to taste
*Method:*
1. Grind grated coconut and green chilies without adding water.
2. Grate cucumbers and soak rawa in cucumber water or normal water. If using normal water, squeeze out excess water completely.
3. Mix all ingredients in a bowl, adjusting sweetness and spice levels as desired.
4. Spread the mixture on turmeric or banana leaves, or fill into idli moulds.
5. Steam for 30 minutes and serve hot with ghee or butter.
