Beetroot Curry

We recently visited one of our favourite childhood hill station Ooty and shopped loads of veggies. And this is what I made with the fresh beetroots we brought back from Ooty. This delicious recipe was shared by the cook at the homestay where we stayed a few months ago. It tasted so good that I simply had to ask him for the recipe. He mentioned that it actually belongs to the owners of the homestay, so full credit to them for this wonderful dish.

The curry is simple, flavourful, and a lovely way to enjoy fresh Ooty beetroot
