Madhura Pineapple Pachadi

Madhura Pineapple Pachadi is a popular Onam Sadya preparation.It is a delightful traditional accompaniment that brings together the contrasting flavours of sweet, tangy, mildly spicy and creamy in one dish. Made with juicy pineapple, fresh coconut, green chilli and a touch of mustard and cumin, this pachadi has a wonderful balance of flavours and textures.

The word Madhura means sweet, and the natural sweetness of ripe pineapple is beautifully complemented by jaggery. The slight sourness of pineapple and curd, along with the gentle heat from green chilli and pepper, gives this pachadi its characteristic sweet-and-tangy flavour. Grapes add little bursts of sweetness and a pleasant texture.

The coconut-based masala gives the pachadi a lovely creaminess, while the final tempering of mustard seeds, curry leaves and dried red chillies adds an aromatic finishing touch.


Ingredients

  • Pineapple – 1 medium, cut into bite-sized chunks
  • Water – ½ cup, or as required
  • Salt – ½ tsp or to taste
  • Chilli powder – ½ tsp
  • Turmeric powder – ¼ tsp
  • Pepper powder – ¼ tsp
  • Green chillies – 2, slit
  • Curry leaves – 1 sprig

For the masala

  • Fresh grated coconut – ½ cup
  • Green chilli – 1
  • Cumin seeds – ½ tsp
  • Mustard seeds – ½ tsp

To finish

  • Thick curd – ¾ cup, well beaten
  • Jaggery – 2–3 tbsp, or to taste
  • Grapes – ½ cup, halved

For tempering

  • Coconut oil – 1 tsp
  • Mustard seeds – ½ tsp
  • Curry leaves – 1 sprig
  • Dried red chillies – 1–2

Method

  1. Cut the pineapple into bite-sized chunks.
  2. Add pineapple to a pan along with ½ cup water, salt, chilli powder, turmeric powder, pepper powder, curry leaves and green chillies. Cook for about 5 minutes, until the pineapple softens slightly.
  3. Grind fresh coconut, green chilli, cumin seeds and mustard seeds with a little water to a smooth paste.
  4. Add the ground paste to the cooked pineapple and bring it to a gentle boil.
  5. Lower the flame and add the beaten curd, jaggery and grapes. Mix well and switch off the flame. Do not boil after adding the curd.
  6. For tempering, heat coconut oil and splutter mustard seeds. Add curry leaves and dried red chillies. Pour over the pachadi.
  7. Mix gently and serve.
